Friday Favorites + New Slow-Cooker Recipe!

Happy Friday! I hope everyone’s day is going well. I’m SO glad it is Friday because it has been a long week of doing stuff for our new house and dealing with Keenan’s bedtime issues and not wanting to go poop in the potty (fortunately he went poop in the potty with my mom at my parents’ house yesterday, while my husband and I were meeting with folks at our new house!). We’ll see how he does today!

Anyhow, I’m looking forward to a relaxing weekend at home and spending some quality family time together. I’m excited to take Keenan to our Alma mater tomorrow, UC Davis, for their annual Picnic Day! My husband and I haven’t gone since we were in school, so it should be lots of fun! The animal barns are usually open, along with the entomology and biology departments, so you can see the various animals and critters that they have, as well as attend various events and eat yummy food!

Enough rambling, it is time for our weekly Friday Favorites Link up party!  If you are new here, every Friday is a chance to reflect back on the week and cherish some of your favorite moments and eats. I hope you will join me and link up with some of your favorites! Since this week was a little crazy, I didn’t have a chance to take many pictures, so my favorites are pretty short and sweet.

Slow-Cooker Garlic Wine Lemon Chicken

I was planning on making my usual Slow-Cooker Lemon Garlic Chicken, but we had a bottle of red wine open, so I decided to add it along with making a few other changes. To my surprise, it turned out really well! The wine added such a nice richness, so I will definitely be making this again!

Slow-Cooker Garlic Wine Lemon Chicken

Prep Time: 10 minutes

Cook Time: 4 hours

Total Time: 4 hours, 8 minutes

Yield: 2 servings

Slow-Cooker Garlic Wine Lemon Chicken

Ingredients

  • 2 frozen skinless, boneless chicken breasts (or thighs)
  • 1 lemon (juiced)
  • 1 Tbsp olive oil
  • 1/4 cup red wine
  • 2 tsp balsamic vinegar
  • 1 tsp Worcestershire sauce
  • 1 glove of garlic (minced)
  • 1/2 tsp garlic powder
  • 1/2 tsp garlic no-salt seasoning
  • salt and pepper to taste

Instructions

  1. Place frozen chicken in the bottom of a crock pot.
  2. Whisk the rest of the ingredients (except for salt and pepper) in a small bowl. Add salt and pepper to taste.
  3. Pour mixture over chicken, place the lid on top and cook on low for 4-6 hours. Serve with roasted veggies, Paleo Creamy Dreamy Cauliflower, or any side dish!

Crock Pot Pork and Apples

This is another recipe that I recently came across and updated. I adapted it from Frugal Foodie Mama. It is super easy and one my family’s favorite crock pot meals! As an added bonus, it is Paleo-friendly and gluten-free.

Crock Pot Pork and Apples

Prep Time: 10 minutes

Cook Time: 6 hours

Total Time: 6 hours, 10 minutes

Yield: 2 ribs with apples

Crock Pot Pork and Apples

Ingredients

  • 2-3 pork chops or boneless country pork ribs (frozen)
  • 1 medium red onion, chopped
  • 2 medium apples (any kind), cored and chopped
  • 1/4 cup apple sauce
  • 1/4 cup apple cider vinegar
  • 1 1/2 tbsp whole grain Dijon mustard
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 cup apple sauce

Instructions

  1. Mix apple sauce, vinegar, mustard, apple sauce, salt and pepper together in a small bowl.
  2. Place apples and onions at the bottom of the crock pot.
  3. Place pork on top of the apples and onions.
  4. Top with mustard mixture, cover and cook on low for 6 hours.

Notes

To make it a balanced meal, add a green salad on the side.

Mexican Chicken in the Crock Pot (a one-pot meal!)

This is one my family’s favorite crock pot meals and I love it because it is SO easy to make. It is truly a “fix it or forget it” recipe.

You just toss everything into the crock pot, let it cook for a few hours and then you have a wonderful dinner waiting for you!

Prep Time: 10 minutes

Cook Time: 4 minutes

Total Time: 4 hours, 10 minutes

Yield: 3 good size portions

Mexican Chicken in the Crock Pot (a one-pot meal!)

Ingredients

  • 3 frozen chicken thighs
  • 1 can of black beans (low or no sodium)
  • 1 can of corn (low or no sodium)
  • 1 red bell pepper (diced)
  • 1 red onion (diced)
  • 1 cup of salsa
  • 1 tsp cumin
  • 1 tsp pepper
  • 1/2 tsp chili powder
  • 1 tsp garlic no-salt seasoning
  • 1 tsp oregano
  • 1/2 cup fresh cilantro (finely chopped)
  • pinch of salt to taste
  • Greek yogurt or sour cream

Instructions

  1. Place frozen chicken on the bottom of the crock pot. Meanwhile, mix black beans, corn, bell pepper, onion, salsa, cilantro and spices in a small bowl.
  2. Place bean mixture on top of chicken. Cook on low for 4-5 hours.
  3. When ready to serve, divide among 3 plates, top with a dollop of Greek yogurt or sour cream, and slices of avocado.

Slow-Cooker Chimichurri Pork

After reading through a recent bon appetit magazine, I was inspired by a chimichurri recipe that I saw. The recipe called for hours of marinating before even cooking the pork, and since I don’t have that kind of time, I adapted it for my slow-cooker. It turned out great and it will now be one of our “regulars!”

Slow-Cooker Chimichurri Pork

Prep Time: 15 minutes

Cook Time: 5 minutes

Total Time: 5 hours, 14 minutes

Yield: 2 generous size pork chops or ribs

Slow-Cooker Chimichurri Pork

Ingredients

  • 2 frozen boneless pork chops or country style boneless ribs
  • 1/2 cup fresh flat-leaf parsley (finely chopped)
  • 4 garlic cloves (minced)
  • 1/4 cup Italian seasoning
  • 1 Tbsp red pepper flakes
  • 1/3 cup olive oil
  • 1/2 cup water
  • 1/4 cup red wine vinegar
  • 2 Tbsp freshly squeezed lemon juice
  • salt and pepper to taste

Instructions

  1. Place frozen pork in the bottom of your slow-cooker.
  2. Mix the rest of the ingredients (except for salt and pepper) together in a medium size bowl.
  3. Add salt and pepper to taste.
  4. Pour sauce over pork and cook on low for 4-6 hours.
  5. Serve with a side of roasted veggies of your choice and enjoy!

Notes

Slow-cooker cooking times vary, so I put mine on low for 10 hours and let the meat cook for 4 hours. It comes out perfectly juicy and tender!
