What I Ate Wednesday + A New Recipe!

Happy Hump Day! It is pajama day in our household today. It must be the rain, because both Keenan and I have been moving rather slow. He slept in until 8:00 this morning (whoohoo!) and still seemed a little tired, so we just stayed home and played. We had plans of meeting our friends at the library, but Keenan refused to get dressed and just wanted to read books and play at home. As much as I wanted to get out of the house, it was nice to just have a relaxing morning at home.

Also, today is the first day of Keenan wearing his “big boy” underwear, so it is probably good we stayed home. So far, he has been doing great, going pee pee on the potty every hour and letting me know when he has to go most of the time. When I was getting him ready for his nap and about to put a diaper on, he absolutely refused to put one on, so he is napping with his underwear as I write this. I’m a little nervous, as I’m afraid of what kind of accident will be waiting for me when he wakes up, but I guess that is just a part of the process (at least I hope!). So, we’ll see how things go!

Since it is Wednesday, it is time for another fun round of What I Ate Wednesday from the lovely Jenn at Peas and Crayons.

Peas and Crayons

Breakfast:

A big bowl of No Oat Oatmeal with sliced strawberries and a Mocha Latte (espresso with a little dark chocolate almond milk and 1% cow’s milk).

Too good to not have for breakfast!

Lunch:

Turkey wrap with P28Foods protein wraps (review coming soon!) and carrots.

Snack (later today, before CrossFit):

Three yummy pieces of KiZE Concepts Pumpkin Seed Bar (review coming soon!).

These bars are SO good!

These bars are SO good, especially since they contain peanut butter!

Dinner:

Since my husband is traveling for work this week, I have been enjoying HUGE “everything but the kitchen sink” salads. Tonight, I’m planning on making an apple walnut salad with feta cheese and a champagne vinaigrette; it should be good! Sorry, I’ve been so excited to eat my salads that I forgot to take any pictures.

Oh, before I forget, here is the recipe for my Salmon Bruschetta with Endive Leaves that some of you asked for. I made it last Saturday and it turned out SO good!

    I’m so glad to hear that Keenan is doing well with wearing his big boy underwear! Yay! Hopefully he sticks with it :-) This is the first week that Ayden has been going down for nap without a pull up on and so far no accidents. I just have to make sure he goes potty right before he goes to sleep. I have a feeling bedtime will take a little longer but that’s okay.
    We didn’t get out of our pajamas until this afternoon and even then it was only to put on yoga pants. Not sure those really count as far as getting dressed goes. Good day to be sick I guess :-)

      I’m keeping my fingers crossed that Keenan sticks with it. I’m just going to take it day by day and hope for the best. So, we’ll see how tomorrow goes! I’m glad we weren’t the only ones staying in our PJ’s today! I hope you feel better soon!

    So excited to hear about big boy underwear. I almost called them panties, that’s what they are in our house of girls. haha :)
    Steve usually works late one night a week and I love deciding what I want to eat on those nights. Sometimes its salads and sometimes its as simply as peanut butter and jelly. :)

      I’m excited, but apprehensive at the same time! I’m keeping my fingers crossed that he keeps it up! Having him underwear is SO much easier than diapers!

    I just commented on the bruschetta recipe–I really want to try it out!!

    I do the same as you–bust out a huge salad for dinner when it’s just me. It’s my favorite! :)

      The bruschetta turned out so well! You will have to try it and let me know what you think. Salads are definitely my favorite when my husband is gone!

    That pumpkin seed bar looks so fun!!! Whenever I”m home alone for dinner I always throw something together that my husband wouldn’t necessarily love. I’ll have faux chicken nuggets with sweet potato fries and kale on the side or this week on Tuesday it was brown rice noodles with daiya…I experiment haha!

    Those KiZE bars looke great…..except for the PB….I’m allergic!!! :( ……but I am able to eat Rise bars! I had a cherry almond energy one before heading off to two back to back karate classes last night! )
